Fidel Castro - alternative version
of Hester's Dal
This is a scrummy indian-style dish with hardly any ingredients. Proof
that meat free food can be rather good sometimes.
Serve with whatever other curries / rice / bread you are cooking.
Ingredients

What to do with them

- 1 mug channa dal yellow split lentils
- 2.5 mugs of water
- 1 heaped tsp turmeric
- 1 heaped tsp salt
- 1 tsp chilli powder (I use "extra hot" chilli
powder)
- 1/2" slice from a block of butter (Anchor butter
is good because it has extra salt)

- Put them all in a pressure cooker, bring up to pressure
and cook on low heat for 18 minutes
- release pressure and taste the lentils - if hard, pressure
cook them for a few minutes longer
- when cooked, if there is too much liquid, simmer gently
to reduce - stir every so often so they dont stick on the
bottom. Lentils should be soft but not completely dissolved
- it is important not to forget the butter!
- if you don't have a pressure cooker you could increase
the water to 4 mugs and simmer until soft (I haven't tried
this!) .

- 1/2 onion
- another 1/2" slice off a block of butter (more to
taste)

- While the lentils are cooking, slice the onion very finely
and saute gently in the butter (don't brown them yet)

- slice finely and add to the onions
|
- 3 fresh green chiillies, chopped
- 2 tomatoes, quarterered
|
- When the lentils are ready, add
- the chillies
- the tomatoes
and cook a few minutes until the tomatoes are soft.
- immediately before serving, turn up the heat under the
onions and cook until they are medium brown but not black/burnt;
the onions will likely be a variety of colours
- stir the mixture into the lentils and serve immediately

- 1 tblsp fresh coriander
- 3 chopped birdseye chillies
|
- Sprinkle on the fresh coriander and chillies and serve.
