Fidel Castro - Hester's Dal
This is a scrummy indian-style dish with hardly any ingredients. Proof
that meat free food can be rather good sometimes.
Serve with whatever other curries / rice / bread you are cooking.
Ingredients

What to do with them
|
- 1 cup red split lentils (washed)
- 4 cups of water
- 1 level tsp turmeric
- 1 level tsp salt
- 1/4 tsp chilli powder
|
- Put them all in a pan and simmer until the lentils all
dissolve.

- While the lentils are bubbling away chop the onion finely
and fry until almost black (caramelised).
Set aside.

- Chop finely then fry until dark brown.
Watch it carefully at the end because it goes from light
brown to burnt very quickly.
Set aside.

- 2 fresh green chiillies, chopped
- 2 tomatoes, quarterered
|
- When the lentils are pretty much dissolved, add
- 1 tblsp of the caramelised onions
- 1 tsp of the fried garlic
- the chillies
- the tomatoes
and cook a few minutes until the tomatoes are soft.

- Stir in the fresh coriander and serve.
